To answer your question, my number one rule is definitely asking the locals; they always know exactly what is special to the region and where to get the real deal. I also love getting away from the main streets, going off-road, and rural is often where you find the most authentic food. I specifically look for the oldest shops and markets to find those hidden gems.
One of my favorite food stories was trying a prawn coconut salad on a trip. I usually dislike prawns and was super hesitant, but a local insisted I try it. Damn, I ended up loving it! I even bought a jar of the salad to take home.
